The Restaurant

Billed as the world's first zero-waste restaurant, Silo operates on the principle of cooking 'without a bin,' a challenge McMaster set for himself. The restaurant's commitment extends to its design, featuring countertops crafted from recycled plastic bottles and furniture made from reconstituted food packaging. Located in Hackney Wick, Silo sources ingredients directly from farmers employing zero-waste techniques, delivered in reusable containers. The restaurant features its own flour mill for ancient wheat varieties, churns its own butter, and even produces oat milk in-house. Silo earned a Michelin Green Star for its sustainability efforts, which it has maintained for three consecutive years. The tasting menu emphasizes plant-based elements, while the 'siloaf' bread, milled in-house, exemplifies their eco-conscious approach, even reappearing as a 'siloaf ice cream sandwich' for dessert.
